RISSOIS DE CAMARAO

Ingredients:

For the Dough:

2 cups flour
2 cups water
1 Tlps margarine
1 Lemon rind

To fry the Rissois:

2 to 3 whole eggs
Bread crumbs
Frying vegetable Oil

For the Shrimp Stock:

1 onion
Margarine
water


For the Filling:

200 grs. Shrimp
1 onion (medium)
2 Tlps margarine
2 Tlps flour
2.5 dl milk or shrimp stock
parsley
salt, pepper
Lemon juice
2 egg yolks

Confection:

Dough:

Put the water to boil with the margarine, Lemon rind and a bit of Salt.
As soon as the water is at full boil, rapidly remove the pan from the stove and pour the whole Flour into the water.
Mix it with a wooden spoon with very fast strokes and return the pan to the stove but make sure you turn the Flame to low/medium .
Continue to mix the dough non-stop.
