600 gr. Sugar
3 dl. Water
400 gr. Almonds (grinded )
8 egg yolks
2 egg whites
1 tsp cinnamon
200 gr. Flour
100 gr butter
1 egg yolk
1 tsp. White vinegar
salt and cold water (as needed)
In a pot, add the sugar and water. Put on the stove top (med-low) and let it stay until it gets dissolved and "runny". (it should be like a "hair thin run")
Mix the grinded almonds. Let it boil, always mixing it. Remove from the stove top and let it cool to a just warm temperature.
Add the yolks, the egg whites and the cinnamon.
Bring it to a boil and let it thicken it.
Mix all the ingredients. Knead it until the dough becomes soft and easy to mold.
Cover the "cupcakes" pans with the dough. ,(about 7 mm of thickeness) Fill each with the Almond Filling.
Goes to the Oven at 350 until it's done. Check often as to not become overcooked.
